Recipe Book – Chocolate Star Frosted Cupcakes

So for a quick easy post, inspired by the skirt I shared at the beginning of the month, I thought I would share a quick and easy cupcakes recipe, that is easy, fun for both kids and adults, and really versatile (which is always good!)

I use this quite often as it’s a sort-of store cupboard recipe, and you can use whatever you have laying around in terms of toppings, fillings and flavourings.

Chocolate Star frosted Cupcakes

Cupcakes with buttercream frosting and chocolate star decorations.

What you need:

Equal parts Flour/Sugar/Butter (I used 50g and made 12 small cupcakes)

An Egg

A Mixing Bowl

Wooden Spoon (ok so it doesn’t have to be wooden)

A Baking Pan

A Teaspoon

12 Cupcake Cases

Oven preheated to 180C/350F/Gas 4

Any other fun things… I used white chocolate chips, chocolate stars and buttercream frosting…

What to do:

Put cake cases in pan

Cream the butter and sugar in a mixing bowl

Gradually add the egg and mix til smooth

Sieve/sift the flour fold together ’til it’s smooth.

(For chocolate cakes, add two teaspoons of cocoa powder to a cup, mix with a little hot water to a smooth consistency and add to the mixture)

Add in anything you would like, I used white chocolate chips, because I had some handy. You can add fruit or other fun things….

Using a teaspoon, evenly distribute cake batter into cake cases.

Put in the oven… for around 15 minutes.

…To check they are cooked dip a clean knife (or skewer) into the centre of a cake, and if it comes out clean, they’re cooked. Obviously if you put chocolate chips in they may have melted, you need a certain amount of common sense here maybe…

Allow to cool.

Decorate as you wish.

Frosting

I used buttercream frosting, you can make this really easily with icing sugar and butter, mixing the two until you get the desired quantity, taste and consistency. I like to add a couple of drops of vanilla extract for a bit of flavour.

Pipe onto the tops of the cupcakes using a piping bag and star nozzle, and add chocolate stars to decorate.
